Carrot Cake is a dessert enjoyed by pixies in Pixie Hollow. It is typically garnished with a carrot on top.

This cake is one of many traditional fairy foods enjoyed during the Fairy Feast, with the others being Blueberry Cake, Pineapple Cake, and Pumpkin Soup.

Variants[]

There are two variants of carrot cake known to be enjoyed throughout Pixie Hollow:

  1. The Very Fairy Carrot Cake, with light frosting and two exposed layers of cake
  2. The standard Carrot Cake, covered in yellow frosting

Story[]

Although never shown in the films, this treat is first mentioned in the Disney Fairies franchise as apart of activity pages promoting the film series. These activites include the Mainland version of this treat's recipe.

The pastry also makes an appearance in Pixie Hollow Online, displayed by Harmony in Harmony's Sweet Shop. It can also be seen throughout Autumn Forest during the Fairy Feast- particularly Cottonpuff Field and Maple Tree Hill.

Mainland Recipe[]

As per promotional material for the film series, the Mainland recipe for this sweet treat is able to make 25 small cakes. The recipe goes as follows:

Cake Ingredients[]

  • 2 cups whole wheat flour
  • 3 cups shredded carrots
  • 1/2 cup unsweetened apple sauce
  • 1 1/2 cups raw sugar
  • 2 eggs
  • 2 egg whites
  • 1/2 cup canola oil
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 11/2 tsp. vanilla extract
  • 1/2 tsp. salt (optional)
  • 1 cup chopped pecans

Frosting Ingredients[]

  • 8 ounces lite cream cheese
  • 1 cup of confectioners’ sugar
  • 1 tsp vanilla extract
  • 2 egg whites

Directions[]

  1. Preheat oven to 350o fahrenheit
  2. Using a large mixing bowl, Combine: eggs, egg whites, canola oil, sugar, apple sauce and vanilla.
  3. Mix in: flour, baking soda, salt, cinnamon, nutmeg.
  4. Stir in: carrots and nuts
  5. Grease 2 muffin pans
  6. Fill muffin cups halfway up
  7. Bake for 40 to 50 minutes or until you can insert and toothpick and have it come out clean.

To Make Frosting[]

  1. Use an electric mixer to combine cream cheese, egg whites, vanilla and sugar
  2. Beat until smooth.

To Assemble Cakes[]

  1. Turn cakes upside down and cut in half horizontally
  2. Apply frosting to the middle and top (formerly bottom) of your cakes
  3. Garnish as you wish.
